I struggled planning the husband’s 30th birthday party… what to have on the menu?
I wanted to make something tasty that even he would eat… but something healthy enough that I could enjoy too.
Off to the kitchen I went and I came up with Protein Powder Cupcakes ❤
Prep: 15 mins * Cook Time: 10 mins
(serves 12)
Ingredients:
- 1/4 cup coconut, whole wheat, or oat flower
- 2 1/2 Tbsp Cupcake Batter or Vanilla Protein Powder
- 1/4 tsp Salt
- 2 Eggs
- 2 1/2 Tbsps Honey
- 1 Tbsp Non-fat, plain Greek yogurt
- 2 Tbsp Coconut oil, melted
- 1/4 tsp Vanilla extract
- Frosting:
- 1/3 Cup Non-fat Plain, Greek yogurt
- 1/4 Cup Cupcake Batter Protein powder
- Sweetener of choice (to taste)
Making it:
- Preheat oven to 350 degrees
- Spray a mini muffin tin with cooking spray (I used Trader Joe’s Coconut Oil)
- In a mixing bowl, combine the flour, protein powder and salt
- In another bowl, whip the eggs, honey, yogurt, coconut oil and vanilla extract with an electric mixer
- Stir in the flour mixture and then beat again until smooth
- Pour the batter into the muffin tins (I used about 1 Tbsp per cupcake)
- Let it stand for 10 minutes before baking, to allow the coconut flour to begin absorbing the liquid
- Bake for 10-15 minutes until they are set and a toothpick comes out clean
- The cupcakes will become more firm as they cool
- Let cool
Frosting:
- Stir together the yogurt and the protein powder, and sweeten to taste
