Fudgy Protein Brownies

Who doesn’t love a warm, gooey brownie? When I am looking for a treat, I so much prefer fudgy cookies and brownies to a slice of cake. Here is a recipe for brownies that will not pack make you pack on the pounds

Ingredients:

  • 1 x 15 oz can of black beans – drained and rinsed
  • 1/2 cup canned pumpkin
  • 1/3 cup fat free cream cheese
  • 2 whole eggs
  • 4 egg whites 
  • 1/3 cup oat flour
  • 1 Tbsp honey
  • 1 Tbsp coconut, whole wheat or additional oat flour
  • 1 scoop protein powder (vanilla, chocolate, PB, whatever flavor you’d like in your brownies) 
  • 1/4 cup sugar free maple syrup
  • 1-2 squares Bakers unsweetened chocolate melted & cooled
  • 1/8 cup unsweetened chocolate chips added at the end after mixing
  • 1/8 cup dark chocolate cocoa powder
  • 1 tsp salt
  • Stevia to taste (optional ~ 2 TBSP)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp almond extract

Making It:

  1. Mix all ingredients in food processor
  2. Stir in chocolate chips
  3. Spoon mixtures into a greased (I used Trader Joe’s Coconut Oil Spray) baking pan (9 x 13)
  4. Bake at 325 degrees for 25-30 minutes
  5. Makes about 8 servings
