Who doesn’t love a warm, gooey brownie? When I am looking for a treat, I so much prefer fudgy cookies and brownies to a slice of cake. Here is a recipe for brownies that will not pack make you pack on the pounds
Ingredients:
- 1 x 15 oz can of black beans – drained and rinsed
- 1/2 cup canned pumpkin
- 1/3 cup fat free cream cheese
- 2 whole eggs
- 4 egg whites
- 1/3 cup oat flour
- 1 Tbsp honey
- 1 Tbsp coconut, whole wheat or additional oat flour
- 1 scoop protein powder (vanilla, chocolate, PB, whatever flavor you’d like in your brownies)
- 1/4 cup sugar free maple syrup
- 1-2 squares Bakers unsweetened chocolate melted & cooled
- 1/8 cup unsweetened chocolate chips added at the end after mixing
- 1/8 cup dark chocolate cocoa powder
- 1 tsp salt
- Stevia to taste (optional ~ 2 TBSP)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp almond extract
Making It:
- Mix all ingredients in food processor
- Stir in chocolate chips
- Spoon mixtures into a greased (I used Trader Joe’s Coconut Oil Spray) baking pan (9 x 13)
- Bake at 325 degrees for 25-30 minutes
- Makes about 8 servings
